I always liked the early Maiden instrumentals: "Transylvania" and "Ghengis Kahn". Really displayed the power of their early material.
"La Villa ..." by Rush is another good one, I agree. So is "Orion" by Metallica (first Metallica song I ever heard).
And of course, the "Ytse Jam" by Dream Theater.
