Charlie Daniels said that "southern rock" is more about the people making the music than the music itself.  The diverse sounds of the bands out of the south really cannot be lumped together.  Lynyrd Skynyrd really does define the "identifiable" sound, though. 

Dave Hlubek of Molly Hatchet said they were more of a hard rock band than southern rock.  Blackfoot's album Strikes was a very straightforward hard rock album.  When the 80's trended toward heavy metal or pop metal those two bands tried to adapt their sound and it did not work. 

If you want to hear a band that cannot be categorized check out the Charlie Daniels Band albums from 1974 to 1980.  They go from country to jazzy blues and even jazz fusion.  If you want to hear long guitar solos that are full of fire buy The Outlaws album Bring 'Em Back Alive. 

Black Oak Arkansas was a good hard rocking band out of the south.  Listen to them and then listen to Alice Cooper from the same time period and you will get the same vibe from the band and different personalities from the singers.
